My French Mother in Law's Basic French Vinaigrette

"I love to use the white balsamic on salads because it doesn't color the lettuce and provides a lighter taste."


1 tbsp dijon mustard

1/4 cup of Picual EVOO

1/4 cup of white balsamic vinegar

Salt and pepper to taste


Mix the dijon mustard with the EVOO using the back of a spoon until all the oil is incorporated and the dijon mustard mixture has increased 3-4 times.

Add the balsamic and mix. Season with salt pepper and add to your salad.
