Easy Shrimp and Grits with Smokey Chipotle EVOO and Garlic Cilantro Dark Balsamic


Ingredients

4 TBSP of Chipotle EVOO

4 TBSP of Garlic Cilantro Balsamic

2 Lbs of X-large Shrimp, (cleaned & deveined)

1 carton of grape tomatoes

1 can of roasted red peppers, (chopped)

2 links of andouille sausage, (cubed)

1 cup of white onion (chopped)

4 cloves of garlic (crushed)

1/2 cup of white wine

1/2 cup of chicken or clam juice

1 1/2 cup Grits and 1/2 cup of cheddar cheese


Directions:

~ Saute onion, garlic in Chipotle EVOO

~ Add Sausage and cook for 2 min

~Add Grape tomatoes and cook until burst mash with the back of the spoon

~ Add Roasted peppers, cook for 2 min

~ Add wine and reduce

~ Add Stock, and cook for another 10 min

~ Add Shrimp and cook until cooked through

~ Add Balsamic Vinegar, stir and remove from heat.

~ Cook Grits per direction, add cheese and stir to incorporate

~Serve Grits in a bowl, topped with Shrimp
